Veal Loin
Veal Loin Steak in Curry
    • 4 veal loin steaks
    • salt
    • white pepper
    • 2 Tbsp oil
    • 4 slices streaky speck
    • 4 slices of pineapple
    • 4 brandy soaked cherries
    • 1 bunch of parsley
    • 1 small onion
    • 1 clove of garlic
    • 30 g butter
    • 1 sour apple
    • 1/2 l meat broth
    • 1 Tbsp coconut flakes
    • 2 Tbsp curry
    • 1/8 l cream

      First, prepare the sauce and keep warm. Therefore, sweat chopped onions and crushed garlic in butter until soft but not brown, and season with salt. Add finely chopped apple to a pot, add tomato paste, stir, sprinkle with flour, and brown. Little by little, add meat broth and let simmer for 20 minutes on low heat. Season sauce with curry, salt, and cream.

      Season the loin steaks with salt and pepper and brush with oil from all sides. Grill steaks on a grill or in a grill pan for about 8 minutes on each side. Then, put aside and let rest. In a different pan, brown speck, and remove when it when done. In the remaining fat, heat up pineapple from both sides (do not brown!). Garnish steaks with pineapple, cherry, speck, and parsley. Serve sauce separately.
